More commonly known as Minga & Knobby, Eddy & John are the PASSIONATE MINDS behind Ramen Daddy — a culmination of their shared passion for French and Japanese cuisine. Over the years Ramen Daddy has built a cult following at local market stalls and pop-ups, with regulars frequenting Verity Lane Market to satisfy their cravings.

OUR BROTH

The heart and soul of Ramen Daddy is our rich and creamy “Tori Paitan”, chicken-baseD broth. Its full-bodied yet delicate flavour is our signature culinary blend of France and Japan. Our plant-based ramen is proudly served with a vegan miso stock.

Slow-COOKED over many hours using a specialty house process, our broth pays homage to JAPANESE CULTURE AND the RICH history of ramen, MIXED with a burst of modern-day magic and traditional French training.

 
 
 
 
 

OUR noods

Smooth and slippery after the precise cooking time, instead of soggy or starchy, our noodles are crafted to create the perfect balance of texture and flavour with plenty of bounce.

Hand-made daily, our noodles are a mixture of Australian durum wheat, rye flour, filtered water and Kansui — a special and important method that gives ramen noodles the perfect sheen and ‘chew’.
